Roasted Brussels Sprouts with Honey, Lemon, and Thyme Dressing

2 1/2 lb brussels sprouts, halved lengthwise
3 Tbsp olive oil
kosher salt and pepper
3 Tbsp honey
2 Tbsp fresh lemon juice
1 Tbsp thyme leaves

Preheat the oven to 400 degrees. In a large bowl, toss the brussels sprouts with 2 tablespoons of the olive oil and season generously with salt and pepper. Spread the brussels sprouts on a large rimmed baking sheet and roast for about 30 minutes, tossing halfway through, until browned and tender. In a medium serving bowl, whisk the honey with the lemon juice, thyme, and the remaining 1 tablespoon of olive oil. Add the brussels sprouts, toss to coat, and serve.
